Dried rosemary is an aromatic spice obtained from the needle-like leaves of the rosemary bush (Rosmarinus officinalis). It has a strong, woody-herbal aroma with light camphor and citrus notes, which add depth and a distinctive flavor to various dishes. Compared to fresh rosemary, dried rosemary has a more intense aroma and flavor, gradually releasing its essences during cooking.
It is widely used in Mediterranean cuisine, combining excellently with meats such as lamb, pork and chicken, as well as with baked potatoes, vegetable dishes and sauces. It is also suitable for flavoring breads, focaccia and olive oil, giving them a characteristic taste. It is often added to stews and soups, and in some cases it is also used to flavor drinks.
Because of its strong flavor and firm texture, dried rosemary is used in small amounts and is sometimes crushed or ground before adding to a dish. For a more intense flavor, it is steamed in liquids or added at the beginning of cooking to fully develop its flavor. Dried rosemary has a long shelf life and is best stored in a tightly closed container, away from moisture and direct light.
